Subaru says your tires should be at 33psi, the tires say you can go as high as 51psi - what do you do? and why?

depends what you're doing. i usually have mine around 33-35 for daily driving. if i'm racing, 38 psi (cold) seems to be the magic number (around 40-42 psi hot). that's on the stock re92s, different tires will need different pressure.

i try to keep them somewhere between 32 and 35 for daily driving.

if i am drag racing i drop it down to 25.

haha, unfortunately. :) i'm trying to save money as i'm selling my other car so i can buy a new one.. i'm going to try to get a sponsor (or two..) soon to get a decent set of wheels and tires.

i should of clarified that the 38 is what i set them to for autox. drag would of course be different since you don't need to worry about rolling onto the sidewalls ;)

I believe Subaru recommends 33psi in the front tires and 32psi in the rear tires (on cold tires). I am running at 34/33...no reason at all, I just like being 1psi over what the manufacturer recommends.
